The Worlds BEST Cardamom & Cinnamon Gluten and Dairy Free Carrot Cake (worra mouthful)

I made this cake for my housemate Petra, who is celiac and dairy free (I know, how truly unfortunate). Turns out she is on her way to Copenhagen and this information fell way outta my brain, so I get to eat it ALL. Which isn't so good for my impending dress fitting, but is very good for my soul.
I think this cake might be the best I have ever made, which is a big deal because baking was once upon a time my "thing". Weirdly it is also gluten and dairy free, which usually doesn't make the absolute best cakes, lets be honest.
I always put less sugar than advised in my cakes, I always find them a bit unnecessarily sugary. Plus I am meant to be avoiding refined sugar and managing my endometriosis with diet, it had been going well, until the "beast from the east" came and I locked myself inside to hibernate.
190g Coconut Oil, room temperature
180g Soft Brown Sugar
160g GF Plain Flour
1 1/2 tsp Xantham Gum
1/2 tsp GF Baking Powder
1/2 tsp Bicarb Soda
1 tbs Cinnamon
1/2 tbs Ground Cardamom
3 Free Range Eggs
Handful of Walnuts, chopped
50g Desiccated Coconut
150g Carrot, grated coarsely
Preheat oven to 180C
Whack the oil in mixing bowl and soften, with a whisk because its super hard core, add the sugar, flour, baking powder, bicarb, gum, cinnamon and cardamom. Mix until well combined, should be pretty thick.
Add an egg at a time, whisk until smooth between each egg. Be careful not to over whisk, you're just looking for a smooth mixture.
Throw in the walnuts, coconut and carrot and fold into the mixture.
Pop into a medium sized greased cake tin, chuck it in the oven for 40ish mins, its cooked when you press it and the cake bounces back, or when you spear it with a cake stick thing and it comes out looking dry-ish. Might need longer, keep your eye on it.
Get it out, let it cool on a rack.
I topped with some more coconut and some dark chocolate shavings.
I served mine with some Greek yogurt & a drizzle of honey but you can top it with a standard cream cheese topping, or a lactose free option. Or gravy if you really want to. Go wild.
